Ingredients:
- 1/2 cup orange marmalade
- 1/4 cup finely minced shallots or red onion
- 2 tablespoons white wine vinegar or champagne vinegar
- 1 teaspoon sugar
- Freshly ground black pepper, to taste
- Optional: 1 tablespoon orange liqueur or 1 teaspoon grated orange zest
Instructions:
- In a small saucepan, heat the marmalade over medium heat until it is melted and smooth. - Add the minced shallots or onion to the saucepan and cook until they are softened and fragrant, about 2-3 minutes. - Stir in the vinegar, sugar, and black pepper, and adjust the seasoning to taste. If using orange liqueur or zest, add it in at this point as well. - Remove the sauce from the heat and let it cool to room temperature. - To serve, spoon a small amount of the Marmalade Crush mignonette sauce over each oyster before eating.
